Wiping has been frustrating as more stool/diarrhea comes out from the act itself. I've noticed that wiping back-to-front (not my norm) makes more stool come out. It makes more stool come out and is faster as wiping front-to-back sees the same results but to a lesser degree. When on antibiotics this issue mostly goes away, but I think it may be because my stool is more solid then. I've been having a difficult time not taking antibiotics since May. Is this an indicator of something outside of just pouchitis?

My advice is to get a bidet toilet so that you wash with warm water rather than wiping.  If you get one with enough spray power, you will only need to pat dry afterward.  If I go away somewhere overnight, especially for a couple nights, I will take my handheld squeeze bidet.  I don't think I could survive without my bidets...
