I went to Puerto Rico two years ago. Granted, I don't have much issue with food overall, but I found island dishes of fish and vegetables very good for me.  Didn't have issues flying, though HI is farther, but flew to Vegas a few years back with no issue. I tried to always eat a light breakfast (yogurt, maybe strawberries), so my body didn't feel overwhelmed from the get go. Actually in PR, the way I ate there made me feel pretty great, except for the day we stopped at a roadside stand and had fried up stuff.

Um, there are toilets on airplanes. I flew to Bangkok a few times (17.5 hour flight), and it just doesn't need to be an issue unless you have untreated pouchitis. If the seat belt sign goes on I just wait until it turns off. If you have urgency I'd suggest getting that properly treated before you leave.

 

Unless you have found yourself especially sensitive to certain foods, you might just try enjoying the variety. Are you having problems you didn't include in your post? 

I travel a good deal and even though I have a k pouch I have certain issues during long flights (transatlantic 8hrs or more)...I do 3 things.

1 I eat light the night before and nothing that could cause a blockage (too much fiber or too thickening)

2 I get up (like Jan) every two hours to empty my pouch and walk around a bit to keep my legs from swelling or getting crampy.

3 If needed I take a gravol  (chewable baby or child's dosage is sufficeint for me and helps me to sleep  in the plane too) preflight or during the flight to slow down my system and stop it from driving me nuts.

As for foods...I keep away from too much fiber (especially pineapple, probably because I have a k pouch and fiber is my enemy) or raw foods when I am not sure where I am eating.
