Food for those on low carb no sugar diet

Hi all, my husband has had what we believe to be sibo for nearly 2 years. Over a year ago he cut out most carbs and all sugar and saw improvement although it was very slow. He is always looking for things to eat that won't bother him and we appreciate ideas and recommendations on this site from those who are experimenting with foods. One thing he has recently been trying is jasmine rice based on the diet by Norman Robillard. I am sure some of you have heard about him.

We hesitated to get too excited thinking that he could actually eat some carbs but it has been several months and he has been eating the rice typically 2x a day. With a fermentation potential of 0 it seems that his body can handle the jasmine rice. He has problems with most any other higher carb foods. I would recommend trying jasmine rice if you have sibo/pouchitis. We have been really amazed.
