My mother was born in Hungary and one of the delicacies she made as a part of a recent authentic Hungarian dinner was a beet salad (in addition to sour cherry soup, my favorite in Hungarian cuisine, and chicken paprikash and dumplings).  They make beet salad with a sweetish white vinegar dressing or marinade.

 

What is popular now are beet chips, either as a stand alone product or in veggie chip assortments with sweet potato and taro. The Big Y has a whole veggie chip stand where they sell beet, carrot, string bean, kale and assorted variety packaged veggie chips.  I like the beet chips a lot.  The kale chips are pretty good too.

Haha. I actually mostly avoid beets for this reason. I love them, but since I've had problems with bleeding, sometimes the sight of them on the return trip freaks me out, until I can quickly think back to what I've eaten. I probably should write something on my hand to the effect of "Relax! You ate beets today."
